Back-to-school season has arrived, bringing with it the daily challenge of preparing varied, balanced, and appealing lunches for your children. To help you tackle this task, here are five meal ideas to switch things up from the usual sandwiches. These options are easy to prepare, nutritious, and sure to please your little scholars.

1. The DIY meal

DIY lunches are a great option for kids who like to keep their foods separate and choose what to eat first. The idea is to prepare various foods that your child can mix and match according to their preferences. It’s perfect for parents who prefer not to follow a recipe, as no cooking is required! Just make sure to include at least one item from each category for a complete meal:

  • Proteins: Grilled chicken cubes, tofu cubes, turkey slices, egg, cheese cubes, etc.
  • Vegetables: Carrot sticks, broccoli bites, cucumber slices, mini peppers, cherry tomatoes, etc.
  • Whole grains: Mini whole wheat pitas or multigrain crackers.
  • Fruits: Grapes, blueberries, apple slices, etc.
  • Dip (optional): Hummus or tzatziki to pair with the veggies and proteins if your child enjoys dips.
2. Wraps

Wraps are a perfect alternative to traditional sandwiches. There are so many ways to prepare them that it’s hard to get bored, and everyone can find something they like. Easy to prepare and eat, here are some interesting ingredients to include in the tortilla:

  • Proteins: Grilled chicken or turkey slices, hot pot beef, legumes, tuna, tofu, tempeh “bacon,” etc.
  • Vegetables: Spinach, cucumber slices, tomatoes, peppers, cabbage, avocado, etc.
  • Sauce: Mayonnaise, plain yogurt mixed with herbs, mustard, hummus, tzatziki, etc.
3. Meal salads

Meal salads are an excellent way to incorporate a wide variety of nutrients into one dish, perfect for kids who enjoy varied textures. They can be made in large batches the night before, providing healthy meals for the whole family. To make it a complete meal, be sure to include a source of grains, vegetables, and proteins. Here are some ideas:

  • Grains: Cooked quinoa, couscous, pasta, rice, etc.
  • Vegetables: Cucumber, cherry tomatoes, peppers, grated carrots, broccoli, spinach, celery, etc.
  • Proteins: Diced feta cheese, canned tuna, leftover grilled chicken, chickpeas, lentils, edamame, sliced eggs, etc.
  • Dressing: Olive oil, lemon juice or balsamic vinegar, salt and pepper. Prepare this salad the night before to save time in the morning. Add a portion of fresh fruit for a complete and colourful lunch.
4. Mini pita pizzas

Mini pita pizzas are a fun option that kids will love. They’re easy to customize according to each child’s taste and can be eaten hot or cold. You can make about fifteen at once on a baking sheet, providing enough for several lunches:

  • Base: Whole wheat pita, mini naan bread, small tortilla.
  • Sauce: Tomato sauce, pesto, butternut squash sauce.
  • Toppings: Sliced vegetables (mushrooms, peppers, spinach) and proteins (chicken slices, ham, grated tofu, seitan pepperoni, ground meat).
  • Cheese: Grated mozzarella, bocconcini slices, goat cheese.
5. Macaroni and cheese with hidden vegetables

For those who love the classic Thermos trick for lunches, Mac 'n' Cheese will always be a hit with kids for a comforting meal. This time, we’re adding a nutritious twist: a hidden vegetable in the sauce! You can use cauliflower or butternut squash, simply blending it into the creamy sauce to keep it hidden. If your child isn’t afraid of greens, you can also add small broccoli florets, grated zucchini, or finely chopped spinach. This results in a complete and nutritious meal that kids will love.
